Happy St. Patrick's Day to all my Irish friends!! And even if you are not Irish, you are today!!! :) I made a wonderful Irish feast for supper tonight. First I made Beef and Guinness Pie. I served it with Colcannon. I doctored it up a bit by sauteing the cabbage in butter and adding onions. Wow, was that good. No better than good (what isn't good if it has butter in it??). I wanted to take the bowl into a room by myself and eat the entire thing!! I also made an Irish Soda Bread which according to my step son was the BEST he has ever eaten! (Wow is my head swollen now, or what?? HA!!) Then we polished it off with vanilla ice cream with the new flavors of Bailey's Irish Cream over it.
Let me just say this was not my original dessert plan, but when I started cooking, in the middle of yesterday's "Nor'easter" and discovered I needed a candy thermometer which I do not own, and my double boiler was MIA, I took the easy route out and just had ice cream!!!
Oh yah, I completely forgot to take a picture......sorry about that. The food looked really good too. Oh well, you will just have to take my word for it!
And I know what you're thinking, wait, aren't you a vegetarian??? Yes, I still am, I made myself a "Tofu and Guinness Pie". Well, not exactly, I used Morningstar Farms Steak Strips and made the sauce with veggie broth instead of beef. Honestly, it tasted fantastic!!!
